Kaju fruit basket mitai




Ingredients:
Cashew/kaju powder 125g
Sugar 100g
Milk powder 30g
Cardamom powder 1/2 tsp
Red,Yellow,Green and orange food colour 1-2 drops
Silicon fruit mould and modak mould

Procedure:
  1. Make cashew mitai mixture as shown in blog link mentioned below http://ambykitchen.blogspot.com/2019/08/custard-apple-kaju-delight-mitai.html?m=1
  2. Pour your cashew mixture onto greased plate.  let it cool a bit and knead nicely. Now use this cashew/kaju dough for making kaju fruit basket.
  3. Firstly grease fruit silicon mould with ghee and keep it aside for a while.
  4. Take a small portion of kaju dough and mix green colour in it and knead nicely.Green colour kaju dough is formed. Now  take out small balls from green kaju dough and insert them in grape shaped mould ,leaves portion of pineapple mould and apple stick press a bit to achieve the desired fruit shape and then take them out as shown in video.
  5. Similarly make yellow ,orange and red colour dough.
  6. Put the yellow colour kaju dough in pineapple mould (fruit part only as green kaju dough would be there in its leaves part as shown in video) and banana mould.
  7. Insert orange kaju dough in orange silicon mould ;red colour kaju dough in apple mould.
  8. Take out pineapple ,orange,apple and banana kaju mitai from respective moulds.
  9. Everytime press the dough a bit inside the mould,flatten it and remove the excess dough and then take it out immediately to achieve the desired fruit shape.
  10. Arrange all this fruits nicely in a fruit basket.
  11. Now take the left over kaju dough in which colour is not added and press it inside the silicon modak mould (add few pistachios at the bottom of mould before pressing the kaju dough inside it) and immediately take them out.
  12. Arrange this kaju modaks in a plate.
  13. Serve lord ganpatiji this innovative mitai prasad.

Chocolate Modak And Assorted Dry Fruits Heart Chocolate





Ingredients:
Chocolate(Milk chocolate and dark chocolate in 8:2 proportion)  170g
Almonds 15
Sugar 4 tsp
Butter 3-4 tsp
Dry fruits chopped 1/4 cup

Procedure:
  1. Weigh chocolate on weighing scale.Take chocolate in microproof bowl and add 1 tsp butter to it and microwave at high power for 1 minute.
  2. Chocolate would melt mix both the chocolates properly 
  3. Take almonds in a pan and dry roast at medium flame for 5 minutes then switch off the gas and add 1 tsp butter to it.
  4. Switch on the gas and at medium flame dry roast chopped dry fruits for 2-3 minutes and take it out.
  5.  In the same pan add 4 tsp sugar let it caramalise stir continuosly( keep the flame low) and when it turns brown switch off the gas and 1 tsp butter.
  6. Now switch on the gas keep the flame low and add dry roasted dry fruits. Stir continuosly for 5 minutes and switch off the gas.let it cool down. After 10-15 minutes chikki is formed remove it from pan and add 1 tsp butter stir it continuously and add dry fruits.let it cool down.Then chikki would be formed after 10-15 minutes. Remove chikki from pan and mash it with the help of pestle in the same pan and keep it aside for a while.
  7. Now grease silicon with butter or oil then fill half of mould with melted chocolate then add crushed dry fruit chikki layer in the middle and cover the top with melted chocolate as shown in the video. Fill the entire heart shaped silicon mould in similar manner.
  8. Now take greased modak mould add roasted almonds in it and cover it with melted chocolate.
  9. Tap both the moulds slightly to remove air bubble.
  10. Refrigerate both the moulds  for about 30 minutes until chocolate hardens.
  11. Now demould all chocolates as shown in the video.
  12. Let ganpati have this innovative almond modak.
Tip: If after demoulding modak your almonds are visible then fill 1 tsp melted chocolate in modak mould and dip your chocolate modaks (whose almonds were visible) in it .Refrigerate and remove when chocolate gets hardened you would get a perfect finished look.

Custard apple kaju delight mitai











Ingredients:
Cashew powder 125 g
Sugar 100 g
Milk powder 30g
Mix chopped dry fruits 1 tbsp
Cardamom powder 1/2 tsp

Procedure:
  1. Weigh all ingredients properly on weighing scale.
  2. Grind cashews in grinder in 30 sec intervals because if grounded continuously cashew would turn into paste.
  3. Now take 80 ml water in a nonstick pan and add sugar into it. Let it cook at medium flame.stir in between. When water starts boiling and entire sugar is dissolved then check for the consistency of sugar syrup.place the sugar syrup in between two fingers as shown in video.when one string consistency is achieved switch off the gas. Attaining appropriate sugar syrup consistency is very important step in this recipe so be careful about that.
  4. Now add cashew powder and milk powder to the sugar syrup and again switch on the gas .keep the flame low and keep on stirring the mixture.
  5. Now after 10-15 minutes mixture starts to thicken ;add cardamom powder.
  6. Now cashew mixture starts leaving the pan as shown in the video.
  7. Now switch off the gas and grease a steel plate with ghee and pour your cashew mixture onto it.
  8. Let it cool a bit.When it turns lukewarm divide it in two portions.let one portion be large.knead both portions nicely.         
  9. In the smaller portion add chopped dry fruits and knead it nicely. Make big balls as shown in video out of the smaller dry fruit mixed dough portion.
  10. Make small balls out of larger portion of dough as shown in video.
  11. Now take a large ball and start sticking the small balls to it as shown in video. Use ghee for sticking the balls. Until the cashew dough is lukewarm it would easily get attached.
  12. Now take green food colour mix few water droplets in it and spread it and apply to your palms and now roll this custard apple mitai in your palms. It would exactly give the mitai appearance of a custard apple fruit. Press cloves at top of custard apple mitai for an authentic fruit look.

Mint chutney restaurant style veg /non veg kabab special



Recipe:
Coriander leaves ( chopped) 1 cup
Mint/pudina leaves 1/2 cup
Onion small size( chopped) 1
Green chilli 3-4
Hung curd 1 tbsp
Salt 1 tsp
Sugar 1/2 tsp
Lemon juice 1 tsp

Procedure:
  1. Grind all ingredients together in mixer into a fine paste.
  2. Your mint chutney is ready to be served

Chicken malai tikka


Ingredients:
Chicken 600gm
Cream 3 tbsp
Hung curd 3 tbsp
Green chilli(crushed) 3
Lemon juice 1 tbsp
Pepper 1/2 tbsp
Tandoori chicken masala 1/2 tsp
Salt 1 tsp
Cornflour 1 tsp
Oil 1 tbsp
Butter 2 tsp

Procedure:
  1. Arrange all dry and wet ingredients mentioned above in a tray.
  2. Now Marinate all chicken pieces with dry and wet ingredients from tray for 2 hours or more.
  3. Prick all marinated chicken pieces for better marination.Refrigerate the marinated chicken.
  4. Take out chicken 1 hour before making it and add 1 tsp cornflour and 1 tbsp oil.
  5. Add 1 tsp butter on grilling pan and cook marinated chicken at low flame for 15 minutes.
  6. Turn all chicken pieces after 7 minutes and continue cooking at low flame.
  7. when chicken stock oozes out of chicken pieces just pour it back on chicken pieces as it contains all the flavours. Drain all chicken pieces.
  8. Check if the chicken is cooked properly or not.
  9.  Take out the cooked chicken in a pan.
  10. Apply butter to your chicken malai tikka and sprinkle some chaat masala.
  11.  Serve hot with mint chutney.

Veg Marble cake


Ingredients:
All purpose flour/maida 1 cup
Sugar 3/4 cup
Butter 3/4 cup
Milk powder 3/4 cup
Milk 1 cup
Baking powder 1 tsp
Baking soda 1/4 tsp
Vanilla essence 1 tsp
Cocoa powder 1 tbsp

Procedure:
  1. Arrange all ingredients in tray
  2. Sieve maida/flour,baking powder and baking soda.
  3. In bowl 1 take milk powder and gradually add milk to it as shown in video and whip it with double beater until homogenous mixture is formed.
  4. Now take bowl 2 and add softened butter(room temperature) and add powdered sugar to it. Whip it with the help of beater for 7-8 minutes till light and fluffy.scrape sides of bowl.
  5. Now slowly pour milk powder mixture from bowl 1 into bowl 2. Whip it.
  6. Now fold in sieved flour mixture in bowl 2 and whip it till homogenous mixture is formed. Scrape sides of bowl 2 and put at centre.
  7. Add 1 tsp vanilla essence and whip it.
  8. Now preheat the cooker for 10 minutes at high flame as shown in the video.
  9. Grease the cake pan with butter and maida/flour as shown in the video.Discard excess flour by inverting vessel.
  10. Now divide the cake batter into two unequal portions.
  11. Take the smaller portion of cake batter and add 1 tbsp cocoa powder and whip it uniformely.
  12. Now start layering the cake batter in cake pan as shown in the video.
  13. Fill cake pan with 80% cake batter else it would overflow.
  14. Now place this cake pan in preheated cooker,close the lid and keep the flame low throughtout the baking process. Bake for 35-40 minutes.
  15. After 35-40 minutes open the lid of cooker and insert cake tester or skewer in cake if it comes out clean then cake is done else bake it for a while until cake is baked completely.
  16. Let it cool down.
  17. Loosen up sides of cake with help of spatula as shown in video.
  18. Your supersoft yummy veg marble cake is ready.

Domino’s style Choco lava cake





Ingredients:

Maida/All purpose flour 1/2 cup
Sugar 1/2 cup
Baking powder 1/2 tsp
Cocoa powder 4 tbsp
Milk 3/4 cup
Butter 2 tsp
Dark chocolate/dairy milk 50gm
Whipping cream 10gm (optional)

Procedure:

  1. Take all dry ingredients( 1/2 cup maida,4 tbsp cocoa powder, 1/2 cup powdered sugar and 1/2 tsp baking powder) and wet ingredients( 50 gms dark chocolate/dairy milk,3/4 cup milk and 2 tsp butter) as per measurement and arrange them in two different trays.
  2. Sieve all dry ingredients i.e 1/2 cup maida,4 tbsp cocoa powder, 1/2 cup powdered sugar and 1/2 tsp baking powder in a big cake mixing bowl. Mix with spatula.
  3. Preheat oven at 150 degree for 5 minute.
  4. Now heat a pan filled with water until one boil. Keep your dark chocolate in glass bowl and keep that bowl in this hot water pan. Let the chocolate melt use spatula as shown in the video.when the chocolate melts a bit add whipping cream (optional) when chocolate melts completely add 2 tsp butter. Mix again. Your chocolate mixture is ready. Just keep it aside for later use.
  5. Now pour milk in the mixing bowl containing all dry ingredients. Mix thoroughly with help of hand stirrer. Now slowly add dark chocolate mixture in the mixing bowl and again mix it uniformely.
  6. Grease the silicon cups with butter and then pour cake mixture into it. Fill upto 80%.
  7. Now bake at 100 degree for 5 minutes
  8. Demould the cakes and Serve this yummy hot and delicious domino’s style chocolava cake .

Hariyali chicken tikka




Ingredients:

Chicken 1/2 kg
Curd 1/3 cup
Lemon juice 1 tsp
Green chilli 1-2
Coriander leaves 1 cup
Mint chutney 1 cup
Black pepper powder 1 tsp
Tandoori masala 1 tsp
Coriander ginger garlic paste 1 tsp

Procedure:
  1. Hung the curd in a clean cotton for 1/2 hr so that all water drains off and you get a perfect hung curd.
  2. Make the marinade by grinding coriander,mint leaves,green chilli,hung curd,coriander ginger garlic paste , pepper , lemon juice,salt and tandoori masala.
  3. Apply marination to chicken pieces and marinate for about 2 hr or more and refrigerate it.
  4. Take out marinated chicken 1 hour before making it.
  5. Take a grilling pan and switch on the flame put some butter on it when butter melts put all marinated chicken pieces on pan.
  6. After 15 minutes turn all the chicken pieces thereby cooking them from both sides. Check whether the chicken is properly cooked.
  7. Take out hariyali chicken tikka in serving plate and apply melted butter and chaat masala rub it nicely and serve with onions and mint chutney.

Mud cake

Mud cake






Ingredients:

Water 1 cup
Sugar 3/4 cup
Coffee powder 1+1/2 Tsp
Cocoa powder 1+1/2 Tbsp
Maida/All purpose flour 1 Cup
Baking powder 3/4 Tsp
Baking soda a pinch
Dark chocolate 40 Gm
Amul butter 100 Gm

Chocolate sauce 
Water 1/4 cup
Sugar 2+1/2 Tbsp
Cocoa powder 2+1/2Tbsp
Coffee powder 1/2 Tsp

Procedure:

  1. Boil 1 cup of water in pan and add coffee powder,cocoa powder and sugar stirring continuosly. Switch off after one boil and transfer it to cake mixing bowl and let it cool down.
  2. Keep 100gm butter and dark chocolate in a hot pan until both melts and homogenous mixture is formed. Let it cool down.
  3. Preheat the oven at 170 degree for 5 min
  4. Now sieve maida,baking powder, baking soda and add this dry mixture to cake mixing bowl. 
  5. Meanwhile Grease the cake pan with butter/ghee/oil and then maida as shown in video
  6. Now whip the mixture with double beater or hand blender.
  7. Finally add the butter chocolate mixture in the cake mixing bowl and again whip nicely no lump should be left.
  8. Pour the cake batter in greased cake pan and bake it in preheated oven at 150 degree for 20 minutes.
  9. Check cake after 20 minutes whether its baked properly or not by inserting skewer in it. It should come out clean else bake it for a while until cake is baked completely.
  10. Now let cake cool down.
  11. Lets start making chocolate sauce for that take water in a pan and add sugar,cocoa powder,coffee powder and let it boil stir continuosly and then switch off the flame.
  12. Prick cake from all sides so that sauce penetrates nicely.
  13. Pour hot sauce over the cake and garnish it with choco chips, almonds and mint balls.
  14. Let the sauce settle down a bit and then serve the delicious mud cake.
