Ingredients:

Maida 1 cup
Egg 1
Water 2-3 tbsp
For making stuffing:
Oil 4 tbsp
Chopped veggies
Garlic 2 tsp
Onion 1
1/2 Green and 1/2 Red capsicum
Mushroom 1 cup
Sweetcorn 1 cup
Cheese grated 1 tbsp
Oregano and chilli flakes 1 TSP
Pepper 1/4 tsp
Salt 1/2 tsp
For making red sauce:
Tomato puree (3 tomatoes boiled,peeled,grinded) 1 cup
Garlic (chopped) 2 tsp
Onion (chopped) 1
Red chilli powder 1 tsp
Oregano and chilli flakes 1 tsp
Sugar 1/2 tsp
Tomato ketchup 1/4 cup
Peri peri masala a pinch
Salt 1/2 tsp
For making white sauce:
Butter 1 tbsp
Garlic (chopped) 2 tsp
Maida 2 tsp
Milk 1 cup
Chilli flakes and oregano 1 TSP
Cheese grated 1/4 cup
Salt 1/2 tsp
Procedure:
Making ravioli dough discs:
Take 1 cup maida and add one egg and add 1/2 tsp salt. Mix it thoroughly. Knead using water and make a medium consistency dough and refrigerate for 15 minutes. After 15 minutes make 3 small balls of dough and roll out chapati and using a circular mould make small equal sized dough discs. Sprinkle some maida/flour over all discs .Dry below fan for 1/2 hr.
For making vegetable stuffing:
Take a pan add oil and add 2 tsp garlic,1 chopped onion,Green and Red capsicum 1 cup, mushroom 1cup ,sweetcorn 1 cup.Increase the flame of gas and drain all the water from veggies add salt,cheese and sprinkle some pepper.
Your stuffing is ready remove it in a bowl and keep aside.
For making red sauce:
Grind 3 boiled,peeled tomatoes into fine puree. In a pan add 4 tbsp oil,2 tsp garlic,1 onion,1 tsp red chilli powder,1 tsp oregano and chilli flakes, add 1 cup tomato puree. Let it boil. Add 1/2 tsp salt, 1/2 tsp sugar,1/4 cup tomato sauce,peri peri masala a pinch. Let it boil until raw smell of tomatoes goes.
Your red sauce is ready remove it in a bowl and keep it aside.
For making ravioli:
Arrange all ravioli discs top them with first layer of vegetable stuffing then second layer Red sauce and third layer of cheese(grated).Apply water at edges of the above disc , close the disc with another disc, press the edges and seal the discs with fork as shown in the video. In this manner make all other ravioli discs.
Now take water in a pan add salt and oil and put all the ravioli discs in boiling water and cook for 5 minutes and then take them out in a strainer.
Your ravioli is ready.
Note : Don't overcook the ravioli else they would be very hard and chewy.
For making white sauce:
Now in a pan add 1 tbsp butter let it melt then add 2 tsp garlic saute for a while then add 2 tsp maida saute till brown. Now pour 1 cup milk let it boil add 1/4 cup grated cheese let it boil until it thickens a bit switch off the gas and. Add 1/2 tsp salt.
Your white sauce is ready
Note: Don't add salt in white sauce when the gas flame is on because the milk might get curdled.
Serving the ravioli:
While serving the ravioli add ravioli in hot white sauce and serve with red sauce as shown in the video.
