Ingredients:
Cashew powder 125 g
Sugar 100 g
Milk powder 30g
Mix chopped dry fruits 1 tbsp
Cardamom powder 1/2 tsp
Procedure:
- Weigh all ingredients properly on weighing scale.
- Grind cashews in grinder in 30 sec intervals because if grounded continuously cashew would turn into paste.
- Now take 80 ml water in a nonstick pan and add sugar into it. Let it cook at medium flame.stir in between. When water starts boiling and entire sugar is dissolved then check for the consistency of sugar syrup.place the sugar syrup in between two fingers as shown in video.when one string consistency is achieved switch off the gas. Attaining appropriate sugar syrup consistency is very important step in this recipe so be careful about that.
- Now add cashew powder and milk powder to the sugar syrup and again switch on the gas .keep the flame low and keep on stirring the mixture.
- Now after 10-15 minutes mixture starts to thicken ;add cardamom powder.
- Now cashew mixture starts leaving the pan as shown in the video.
- Now switch off the gas and grease a steel plate with ghee and pour your cashew mixture onto it.
- Let it cool a bit.When it turns lukewarm divide it in two portions.let one portion be large.knead both portions nicely.
- In the smaller portion add chopped dry fruits and knead it nicely. Make big balls as shown in video out of the smaller dry fruit mixed dough portion.
- Make small balls out of larger portion of dough as shown in video.
- Now take a large ball and start sticking the small balls to it as shown in video. Use ghee for sticking the balls. Until the cashew dough is lukewarm it would easily get attached.
- Now take green food colour mix few water droplets in it and spread it and apply to your palms and now roll this custard apple mitai in your palms. It would exactly give the mitai appearance of a custard apple fruit. Press cloves at top of custard apple mitai for an authentic fruit look.
