Vanilla buttercream cake

Vanilla buttercream cake




Ingredients:

For making vanilla sponge cake
Maida 1 cup
Sugar 3/4 cup
Butter 3/4 cup
Milk powder 3/4 cup
Milk 1 cup
Baking powder 1 tsp
Baking soda 1/4 tsp
Vanilla essence 1 tsp

Sugar solution
Sugar 1 cup
Water 1/2 cup

For icing cake
Whipping cream 100 gm

Procedure:

  1. First sieve flour,baking powder and baking soda.
  2. In a mixing bowl take milk powder and gradually add milk to it as shown in video and whip it with the help of double beater into homogenous consistency no lumps should be there.
  3. Meanwhile take a dry cooker put 1 cup salt at the bottom and all arrangements as shown in video and close cooker with lid and preheat at high temperature for 10 min. Also take a big cake pan and grease it with butter/oil/ghee and then sprinkle some flour tap the vessel from all sides so that flour gets evenly distributed throughout the vessel and turn over the container to remove extra flour and when done keep the greased cake pan aside for later usage.
  4. Now take another mixing bowl and add softened butter and whip it with the help of beater and slowly add castor sugar and beat them together till light and fluffy (it would take 7-8 min). 
  5. Now add milk powder paste of step 2 and whip it for a while and add vanilla essence.
  6. Then fold in sieved flour mixture of step 1 and whip for a while.
  7. Pour batter in greased cake pan and tap the vessel so that batter spreads evenly (place butter paper at base of cake pan if available).
  8. Keep the cake pan on stand inside the preheated cooker and close the lid and put some heavy weight on plate as shown in video and bake for nearly 30 min at low flame.
  9. After 30 min insert a skewer in the cake if it comes out clean then cake is done or else bake it for another 5-10 min as per your estimate and recheck the cake with help of  cake tester.
  10. When done completely let the cake cool down and then loosen up the sides with help of knife and place a plate at the top of cake pan and slowly invert it.
  11. Your yummy supersoft veg vanilla butter sponge cake is ready.
Sugar syrup
  1. Combine sugar and water in a deep nonstick pan, mix well and cook on medium flame for 6-7 minutes,while stirring occasionally.
  2. Strain it using a strainer.
  3. Cool completely and use it for making below pastry cake.
Icing the cake
  1. Keep an empty clean bowl in fridge for an hour or keep the bowl in another bigger sized bowl containing ice water for preparing icing for the cake.
  2. Now in this bowl take 100gm whipping cream and with the help of electric beater beat the whipping cream at low speed until soft peaks are formed. Don’t overdo it else whipping cream would get curdled.
  3. Now fill this whipping cream in piping bag and refrigerate it for 15 min.
  4. Meanwhile take the above sponge cake and with the help of knife cut it horizontally into two equal halves.
  5. Now keep the two halves of cake in two plates and moist them evenly with sugar syrup using pastry brush/spoon.
  6. Take out the piping bag from refrigerator and apply some whipping cream at the base of plate and spread it evenly.
  7. Now place your bottom cake half  over the plate and  start covering it with cream as shown in video and spread it evenly.
  8. Now add few chopped fruits kiwi,orange (without skin) on cake and again cover it with whipping cream and spread evenly as shown in video.
  9. Now place your second cake half on top of it and again moist the cake top with sugar syrup and finally cover the entire cake with icing and decorate with fruits as per your choice.
  10. Chill the cake for an hour in refrigerator.
  11. Now cake is ready to be cut for your special birthday party all homemade.
