Chatpati frankie

Chatpati frankie



Ingredients:
Paneer cubes 1 cup
Kneaded wheat flour dough / kneaded all purpose flour dough 1 cup

For marination
Hung curd 1/4 cup
Spinach/ palak 1 cup (9 leaves)
Pudina/ mint 1 cup
Fresh coriander leaves 1 cup
Green chilli 1-2
Garlic 6-7
Ginger 1/4 inch
Garam masala 1/2 Tsp

For making frankie
Paratha - 3
Finely sliced 1 onion, 1 tomato,1/2 capscicum and any other veggies as per your choice
Finely grated cheese cubes 2
Pudina/mint chutney 1/4 cup
Mayonaise 3 Tsp
Tomato ketchup 1/4 cup
Chilli sauce 3 Tsp
Chaat masala 1Tsp
Chilli flakes 1/4 Tsp
Black Pepper 1/4 tsp

Salt as per taste

Procedure:

Marinating paneer

  1. Arrange all marination ingredients in a plate.Take paneer cubes as its texture is soft just gently prick them with toothpick for better marination.
  2. Now lets start with preparing the marinade for that take a grinder and take palak,pudina,coriander,hung curd,ginger,garlic,green chilli,garam masala,salt and make a fine paste.
  3. Apply this marinade to paneer cubes and marinate overnight. (If your marinade becomes too thin then add 1/2 tsp cornflour for increasing its thickness
Making paneer stuffing
  1. On the next day take out marinated paneer cubes and let it attain room temperature.
  2. Heat up non stick grill pan at low flame and add 1 Tbsp butter and spread it all over the pan and add marinated paneer cubes.
  3. Let it cook properly from both sides. Don't overcook the paneer else it would become chewy. 
  4. Keep it aside.
 Making paratha
  1. Pull out a ball from kneaded wheat dough and start making paratha.
  2. Roll out a small 4-5 inch diameter circular disc. Sprinkle some flour while rolling paratha. Apply some ghee at top of paratha and make a cut on the radius and start rolling it in circular motion till it reaches its origin in short make a cone as shown in the video.
  3. Now flatten the cone and roll out paratha and roast it properly from both side applying ghee.
  4. In the same manner make 3 parathas and keep aside.
Assembling frankie

Take a paratha on a plate apply
  • First layer of butter
  • Second layer of mayonaise
  • Third layer of tomato ketchup
  • Fourth layer of pudina chutney
Now keep your paneer to one side of paratha and then add 
  • First layer of onion
  • Second layer of tomato
  • Third layer of capsicum
  • Sprinkle some salt, chaat masala,black pepper,chilli flakes,tomato ketchup,chilli sauce and grated cheese
Roll the paratha in circular motion as shown in video. Similarly make two more frankies.
Thus from 1 cup paneer you can make 3 chatpati frankie.

Tip:
Keep the veggies and sauce as per your kids choice i did the same.
You can add veggies like purple/green cabbage,red and yellow capsicum,carrot,blanched french beans,iceberg lettuce,microgreens/sprouts try to add crunchy veggies for better taste.
