Vegan veg apple cinnamon cake

Vegan veg apple cinnamon 





Ingredients:

For making cake
Castor sugar 1/2 cup
Butter 1 cup
Condensed milk ( amul mithaimate) 1/2 cup
All purpose flour/ maida 1 cup
Baking soda 1/4 Tsp
Baking powder 1/2 Tsp
Lemon juice 1/2 lime
Lemon zest 1/2 tsp
Milk 2 Tsp
Nutmeg, cinnamon and mace powder 1/4 Tsp
Apple 2+1/2

Sauce 
Butter 1/2 cup
Castor sugar 1/2 cup

Procedure:
  1. Wash and peel the apples and cut them in thin slices and take them in a clean bowl and squeeze   juice of two limes and grate 1/2 inch cinnamon stick (or cinnamon powder 1/4 tsp) on it and keep aside.
  2. Take a big cooker pan and grease it with butter/oil/ghee and then sprinkle some flour tap the vessel from all sides so that flour gets evenly distributed throughout vessel and turn over the container to remove extra flour and when done keep these greased cake pan aside for later usage.
  3. Now take a dry pressure cooker and keep stand at the bottom of cooker and put 1 cup salt as shown in the video and close cooker with lid and preheat cooker on high flame for 10 min.
  4. Lets make the cake batter now for that take a mixing bowl add butter which is at room temperature and whip it with the help of double beater then secondly slowly add castor sugar in the same bowl and again whip it. Third step is add 1/2 cup condensed milk in the same pan and whip it properly for 8-10 min.
  5. Now add grated lemon zest of two limes ( grate lemon carefully don't take white part of lime it is bit bitter in taste)
  6. Then add 1 tsp vanilla essence.
  7. Squeeze 1/2 lime juice and whip it
  8. Now take all dry ingredients all purpose flour, baking powder,baking soda and also take grated cinnamon,nutmeg and mace or if you have readymade spice powder of these spices take 1/2 tsp and sieve all them together.
  9. Now fold in all sieved dry ingredients properly in the bowl.
  10. Then add 2 Tsp milk and fold in properly
  11. Now take half  of the lemon, cinnamon marinated apple and chop them and add into above cake batter and fold in properly until combined.
  12. Now start preparing the sauce for that heat up a non stick pan at low flame and take 1/2 cup butter and 1/2 cup cup castor sugar and keep on stirring bring it to boil and continue to stir for 30 sec or until vigorously bubbling. Let the sauce get caramalised i.e brown in colour as shown in video.
  13. Now pour the sauce into greased cake pan take out some seperated butter from sauce and keep aside
  14. Arrange the apples on top of sauce in circular pattern as shown in video thereby covering entire surface of cake pan. Now pour the same melted butter from your sauce which you had kept aside on top of all apples.
  15. Now pour in the cake batter on top of it. 
  16. Tap the vessel so that the batter spreads evenly and then smooth top of batter with spatula.
  17. Keep the cake pan on stand inside the preheated cooker and close the lid and put some heavy weight on the plate as shown in video and bake for nearly 55-60 min or until toothpick inserted comes out clean.
  18. After nearly 55 min switch off the gas and carefully open the cooker.
  19. Insert a skewer or toothpick if it comes out clean then cake is done else again bake it in cooker for a while as per your estimate.
  20. When done completely let the cake cool down .
  21. Once the cake is cooled loosen up the sides with the help of knife and place a plate at the top of cake pan and slowly invert it.
  22. Your yummy vegan veg apple cinnamon cake is ready to be served with iceccream.

Tip
  1. We marinate the apples with lime and cinnamon which gives it a perfect blend of sweet and sour taste like peach fruit if you are a sweet tooth person avoid squeezing lime on apples but do not avoid adding lime juice in cake batter the taste of lime in cake batter is negligent but it improves cake texture.
  2. The cake becomes soft and fudgy like brownie because of apple as it leaves juices when cooked but that is the main ingredient which gives elegant taste to the cake.
